Ingredients
- 4 boneless, skinless chicken breasts (about 1 pound)
- 3 tablespoons vegetable oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1 lime, cut into wedges
Instructions
- In a medium bowl, combine the vegetable oil, apple cider vinegar, soy sauce, garlic, cumin, paprika, oregano, chili powder, salt, black pepper, and cayenne pepper. Mix well to form a marinade.
- Place the chicken breasts in a gallon-size resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, for the best flavor infusion.
- Preheat your oven to 375°F (190°C). Place a baking dish inside the oven while it preheats to warm it up.
- Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade. Arrange the chicken breasts in the preheated baking dish.
- Bake the chicken in the oven for 30-40 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
- Remove the chicken from the oven and let it rest for 5 minutes before slicing. This will help the juices redistribute throughout the meat.
- Serve the Pollo Adobado with lime wedges for squeezing over the top. Pair with rice or a fresh salad for a complete meal.
