Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into thin strips
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 cup fresh cilantro, chopped
  • Cooked white rice or warm tortillas, for serving

Instructions

  1. Season the chicken strips with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken strips and cook until golden brown on both sides, about 5 minutes each side. Remove from the skillet and set aside.
  2. In the same skillet, add the sliced onion, red bell pepper, and green bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic to the skillet, and cook for 1 minute until fragrant. Stir in the ground cumin and paprika.
  4. Lower the heat to medium and add the heavy cream and chicken broth. Stir to combine and bring to a gentle simmer. Let it cook for 5 minutes, allowing the flavors to meld.
  5. Return the cooked chicken to the skillet and stir in the sour cream. Cook for an additional 5 minutes or until the chicken is cooked through and the sauce has slightly thickened. Garnish with fresh cilantro before serving.
  6. Serving Tip: Serve the Pollo a la Crema over cooked white rice or with warm tortillas. For extra flavor, squeeze fresh lime juice over the top before serving.
