Ingredients
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into thin strips
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sour cream
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 cup fresh cilantro, chopped
- Cooked white rice or warm tortillas, for serving
Instructions
- Season the chicken strips with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken strips and cook until golden brown on both sides, about 5 minutes each side. Remove from the skillet and set aside.
- In the same skillet, add the sliced onion, red bell pepper, and green bell pepper. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the minced garlic to the skillet, and cook for 1 minute until fragrant. Stir in the ground cumin and paprika.
- Lower the heat to medium and add the heavy cream and chicken broth. Stir to combine and bring to a gentle simmer. Let it cook for 5 minutes, allowing the flavors to meld.
- Return the cooked chicken to the skillet and stir in the sour cream. Cook for an additional 5 minutes or until the chicken is cooked through and the sauce has slightly thickened. Garnish with fresh cilantro before serving.
