  • 1 teaspoon salt
  • 1 cup polenta (coarse cornmeal)
  • 2 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 4 ounces Gorgonzola cheese, crumbled

  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Bring 4 cups of water and 1 teaspoon of salt to a boil in a medium saucepan over medium-high heat.
  2. Once the water is boiling, gradually whisk in 1 cup of polenta, reducing the heat to low. This helps prevent clumping.
  3. Continue to cook the polenta on low heat, stirring frequently with a wooden spoon for about 25 minutes, or until it thickens and pulls away from the sides of the saucepan. A tip is to stir gently but constantly in the beginning to avoid any lumps forming.
  4. Remove the saucepan from heat and stir in 2 tablespoons of unsalted butter and 1/2 cup of heavy cream until well combined and creamy. This adds a delicious richness to the dish.
