- 1 teaspoon salt
- 1 cup polenta (coarse cornmeal)
- 2 tablespoons unsalted butter
- 1/2 cup heavy cream
- 4 ounces Gorgonzola cheese, crumbled
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Bring 4 cups of water and 1 teaspoon of salt to a boil in a medium saucepan over medium-high heat.
- Once the water is boiling, gradually whisk in 1 cup of polenta, reducing the heat to low. This helps prevent clumping.
- Continue to cook the polenta on low heat, stirring frequently with a wooden spoon for about 25 minutes, or until it thickens and pulls away from the sides of the saucepan. A tip is to stir gently but constantly in the beginning to avoid any lumps forming.
- Remove the saucepan from heat and stir in 2 tablespoons of unsalted butter and 1/2 cup of heavy cream until well combined and creamy. This adds a delicious richness to the dish.
- Gently fold in 4 ounces of crumbled Gorgonzola cheese and 1/4 teaspoon of black pepper. Stir until the cheese melts completely and is evenly distributed.
- Taste and adjust the seasoning if needed. You can add more salt or pepper to suit your taste.
