  1. 1. Start by preparing all your ingredients. Dice the pineapple and set aside. Slice the green onions, mince the garlic, and dice the carrots. Have all other ingredients ready to go. Tip: Use day-old chilled rice for the best texture.
  2. 2. Heat a large non-stick skillet or wok over medium-high heat. Once hot, add 1 tablespoon of vegetable oil. Carefully pour in the beaten eggs and scramble them gently until just set. Transfer the eggs to a plate and set aside.
