Ingredients
- 2 cups all-purpose flour
- 1 cup water
- 1 tbsp olive oil
- 1 tsp salt
- 6 cloves garlic, thinly sliced
- 1/4 cup olive oil
- 1/4 tsp red pepper flakes
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- In a large mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Gradually mix in 1 cup of water and 1 tbsp of olive oil until a dough forms.
- Transfer the dough to a lightly floured surface and knead it for about 10 minutes. Wrap the dough in plastic wrap and let it rest for 15-20 minutes.
- After resting, divide the dough into small pieces. Roll each piece into long, thin ropes about 1/4 inch in diameter, using your palms.
- Bring a large pot of salted water to a boil. Add the pici and cook for 6-8 minutes until they float to the surface and are tender but al dente. Use a colander to drain the pasta, reserving 1/4 cup of the pasta water.
- In a large frying pan, heat 1/4 cup of olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing until the garlic is golden and fragrant, about 3-4 minutes. Be cautious to not let the garlic burn.
- Add the cooked pici to the pan with garlic sauce, along with the reserved pasta water. Toss well to coat the pasta evenly with the sauce.
- Transfer the pici to serving plates. Sprinkle with freshly grated Parmesan cheese and season with salt and pepper to taste. Garnish with fresh basil leaves before serving.
