Ingredients

  • 2 cups all-purpose flour
  • 1 cup water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 6 cloves garlic, thinly sliced
  • 1/4 cup olive oil
  • 1/4 tsp red pepper flakes
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a large mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Gradually mix in 1 cup of water and 1 tbsp of olive oil until a dough forms.
  2. Transfer the dough to a lightly floured surface and knead it for about 10 minutes. Wrap the dough in plastic wrap and let it rest for 15-20 minutes.
  3. After resting, divide the dough into small pieces. Roll each piece into long, thin ropes about 1/4 inch in diameter, using your palms.
  4. Bring a large pot of salted water to a boil. Add the pici and cook for 6-8 minutes until they float to the surface and are tender but al dente. Use a colander to drain the pasta, reserving 1/4 cup of the pasta water.
  5. In a large frying pan, heat 1/4 cup of olive oil over medium heat. Add the sliced garlic and red pepper flakes, sautéing until the garlic is golden and fragrant, about 3-4 minutes. Be cautious to not let the garlic burn.
  6. Add the cooked pici to the pan with garlic sauce, along with the reserved pasta water. Toss well to coat the pasta evenly with the sauce.
  7. Transfer the pici to serving plates. Sprinkle with freshly grated Parmesan cheese and season with salt and pepper to taste. Garnish with fresh basil leaves before serving.
