Ingredients

  • 1 1/2 pounds of beef sirloin steak, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • 1 tablespoon sugar
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon freshly ground black pepper (coarse)
  • Cooked white rice, for serving

Instructions

  1. Begin by preparing your ingredients: slice the beef sirloin steak across the grain into thin strips, chop the garlic, and slice the bell peppers and onion.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, add the beef strips in batches to avoid overcrowding. Cook until browned, approximately 3-4 minutes per side. Remove beef from the skillet and set aside.
  3. Reduce the heat to medium and add the remaining tablespoon of vegetable oil to the skillet. Add the sliced onion, bell peppers, and minced garlic. Stir-fry until the vegetables are tender, about 5-7 minutes.
  4. In a small bowl, combine soy sauce, water, cornstarch, sugar, and ground black pepper. Stir well to dissolve the cornstarch.
  5. Return the cooked beef to the skillet, and pour the soy sauce mixture over the beef and vegetables. Stir to combine everything well.
  6. Increase the heat to medium-high and cook, stirring frequently, until the sauce thickens and the beef is heated through. This will take about 5 minutes. Season with additional freshly ground coarse black pepper to taste.
  7. Serve the Pepper Steak hot over a bed of cooked white rice. Enjoy!
  8. Tip: Make sure to slice your beef thinly and uniformly to ensure even cooking. You can freeze the beef for about 20 minutes to make slicing easier.
  9. Tip: To add more color and flavor, consider using a variety of bell peppers such as yellow or orange.
