Ingredients
- 1 1/2 pounds of beef sirloin steak, sliced into thin strips
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup water
- 2 tablespoons cornstarch
- 1 tablespoon sugar
- 1/2 teaspoon ground black pepper
- 1 tablespoon freshly ground black pepper (coarse)
- Cooked white rice, for serving
Instructions
- Begin by preparing your ingredients: slice the beef sirloin steak across the grain into thin strips, chop the garlic, and slice the bell peppers and onion.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, add the beef strips in batches to avoid overcrowding. Cook until browned, approximately 3-4 minutes per side. Remove beef from the skillet and set aside.
- Reduce the heat to medium and add the remaining tablespoon of vegetable oil to the skillet. Add the sliced onion, bell peppers, and minced garlic. Stir-fry until the vegetables are tender, about 5-7 minutes.
- In a small bowl, combine soy sauce, water, cornstarch, sugar, and ground black pepper. Stir well to dissolve the cornstarch.
- Return the cooked beef to the skillet, and pour the soy sauce mixture over the beef and vegetables. Stir to combine everything well.
- Increase the heat to medium-high and cook, stirring frequently, until the sauce thickens and the beef is heated through. This will take about 5 minutes. Season with additional freshly ground coarse black pepper to taste.
- Serve the Pepper Steak hot over a bed of cooked white rice. Enjoy!
- Tip: Make sure to slice your beef thinly and uniformly to ensure even cooking. You can freeze the beef for about 20 minutes to make slicing easier.
- Tip: To add more color and flavor, consider using a variety of bell peppers such as yellow or orange.
