Ingredients

  • 12 oz (340 g) penne pasta
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup vodka
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh basil (optional)

Instructions

  1. Fill a large pot with water and add a pinch of salt. Bring it to a boil over high heat. Once boiling, add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Stir occasionally to prevent sticking. Drain and set aside, reserving about 1/2 cup of pasta cooking water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes, stirring frequently.
  3. Carefully add the vodka to the skillet. Allow it to simmer until the liquid is reduced by half, about 3-4 minutes. This step helps to mellow the alcohol and blend it into the sauce.
  4. Pour in the crushed tomatoes and stir to combine. Bring the mixture to a simmer, then reduce the heat to low. Allow it to cook for about 15 minutes, stirring occasionally. If the sauce becomes too thick, add a bit of the reserved pasta water to reach the desired consistency.
  5. Gently stir the heavy cream into the tomato mixture. Cook for another 5 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.
  6. Add the cooked penne pasta to the sauce in the skillet. Toss everything together until the pasta is evenly coated with the sauce. If necessary, adjust the seasoning with more salt and pepper.
  7. Divide the pasta among four plates, top with freshly grated Parmesan cheese and a sprinkle of chopped fresh basil, if using. Serve immediately and enjoy!
