Ingredients

  • 12 oz (340g) penne pasta
  • 1 lb (450g) salmon fillets, skin removed
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup baby spinach, packed
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions

  1. 1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. 2. Meanwhile, set your oven to broil on high (around 450°F). Line a baking sheet with foil and place the salmon fillets on it. Drizzle with a tablespoon of olive oil and season with salt and pepper.
  3. 3. Broil the salmon for around 8-10 minutes, or until it flakes easily with a fork. Keep an eye on it to prevent overcooking. Remove from the oven and set aside.
  4. 4. In a large skillet or saucepan, heat the remaining tablespoon of olive oil and the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. 5. Pour in the heavy cream and bring to a gentle simmer. Add the baby spinach and cook until wilted, about 2 minutes.
  6. 6. Stir in the Parmesan cheese, lemon zest, and lemon juice, and mix until the cheese is melted and the sauce is smooth. Season with additional salt and pepper if needed.
  7. 7. Flake the cooked salmon into bite-sized pieces and add them, along with the cooked penne, to the sauce. Gently mix until everything is well combined.
  8. 8. Serve the pasta dish hot, garnished with additional Parmesan cheese if desired.
