Ingredients
- 12 oz (340g) penne pasta
- 1 lb (450g) salmon fillets, skin removed
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup baby spinach, packed
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Zest of 1 lemon
- Juice of 1/2 lemon
Instructions
- 1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
- 2. Meanwhile, set your oven to broil on high (around 450°F). Line a baking sheet with foil and place the salmon fillets on it. Drizzle with a tablespoon of olive oil and season with salt and pepper.
- 3. Broil the salmon for around 8-10 minutes, or until it flakes easily with a fork. Keep an eye on it to prevent overcooking. Remove from the oven and set aside.
- 4. In a large skillet or saucepan, heat the remaining tablespoon of olive oil and the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- 5. Pour in the heavy cream and bring to a gentle simmer. Add the baby spinach and cook until wilted, about 2 minutes.
- 6. Stir in the Parmesan cheese, lemon zest, and lemon juice, and mix until the cheese is melted and the sauce is smooth. Season with additional salt and pepper if needed.
- 7. Flake the cooked salmon into bite-sized pieces and add them, along with the cooked penne, to the sauce. Gently mix until everything is well combined.
- 8. Serve the pasta dish hot, garnished with additional Parmesan cheese if desired.
