Ingredients

  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 (28 oz) can of crushed tomatoes
  • Salt and pepper to taste
  • 1 teaspoon sugar
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil over high heat.
  2. Add the penne pasta to the boiling water and cook according to the package instructions until al dente, usually about 10-12 minutes.
  3. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  4. Add the minced garlic and red pepper flakes to the skillet and sauté until the garlic is golden and fragrant, about 1-2 minutes.
  5. Stir in the crushed tomatoes, sugar, and a pinch of salt and pepper. Bring to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together.
  6. Once the pasta is cooked, reserve 1/2 cup of the pasta water, then drain the pasta in a strainer.
  7. Add the cooked penne to the sauce in the skillet. Toss to coat the pasta thoroughly. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
  8. Stir in the chopped fresh basil and let cook for another minute.
  9. Serve hot, garnished with grated Parmesan cheese and fresh parsley, if desired.
