Ingredients
- 12 ounces pasta (such as penne or rigatoni)
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 4 cups broccoli florets
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- Salt and black pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
- While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through (about 5-7 minutes).
- Add the broccoli florets to the skillet with the sausage. Keep stirring occasionally and cover the skillet for 2-3 minutes to steam the broccoli until tender-crisp.
- Add the minced garlic and red pepper flakes to the sausage and broccoli. Cook for another 1-2 minutes, stirring frequently, until the garlic is fragrant but not burned.
- Add the cooked pasta to the skillet. If the mixture seems dry, add some reserved pasta water, a few tablespoons at a time, to achieve the desired consistency.
- Season the dish with salt and black pepper to taste. Stir in the grated Parmesan cheese and mix well until the cheese is melted and evenly distributed.
- Serve the pasta hot, garnished with chopped fresh parsley if using. Enjoy your meal!
