Ingredients

  • 12 ounces pasta (such as penne or rigatoni)
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 4 cups broccoli florets
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned and cooked through (about 5-7 minutes).
  3. Add the broccoli florets to the skillet with the sausage. Keep stirring occasionally and cover the skillet for 2-3 minutes to steam the broccoli until tender-crisp.
  4. Add the minced garlic and red pepper flakes to the sausage and broccoli. Cook for another 1-2 minutes, stirring frequently, until the garlic is fragrant but not burned.
  5. Add the cooked pasta to the skillet. If the mixture seems dry, add some reserved pasta water, a few tablespoons at a time, to achieve the desired consistency.
  6. Season the dish with salt and black pepper to taste. Stir in the grated Parmesan cheese and mix well until the cheese is melted and evenly distributed.
  7. Serve the pasta hot, garnished with chopped fresh parsley if using. Enjoy your meal!
