- 12 ounces of pasta (such as spaghetti or penne)
- 1 cup unsalted shelled pistachios
- 1 cup fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1 clove garlic
- 1/2 cup extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice

Instructions
- Gather all your ingredients and kitchen equipment. You will need a blender or food processor, a large pot, colander, and a large mixing bowl.
- Fill a large pot with water, add a pinch of salt, and bring to a boil over high heat.
- Add the pasta to the boiling water and cook according to the package instructions, usually around 8-10 minutes, or until al dente.
- While the pasta is cooking, prepare the pistachio pesto. In a blender or food processor, combine 1 cup of pistachios, 1 cup of basil leaves, 1/2 cup of grated Parmesan cheese, 1 clove of garlic, 1/2 cup of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Blend the ingredients until smooth. Scrape down the sides if needed, and add a tablespoon of lemon juice to the mix. Blend again until well incorporated.
- Taste the pesto and adjust seasoning to your liking. Sometimes, a little more lemon juice or salt can enhance the flavors.
- Reserve 1 cup of pasta cooking water, then drain the pasta using a colander.
