Ingredients

  • 2 pounds fresh mussels, scrubbed and debearded
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 can (28 ounces) crushed tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/4 cup chopped fresh parsley
  • 1/2 cup dry white wine
  • 1 tablespoon lemon juice

Instructions

  1. Inspect the mussels and remove any with cracked shells. Rinse under cold water and scrub with a brush. Remove the beards by pulling firmly.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and saute for about 3-4 minutes until translucent. Add the garlic and red pepper flakes and cook, stirring, for another minute.
  3. Add the crushed tomatoes, salt, pepper, and oregano to the pot. Stir to combine. Reduce the heat to low and let the sauce simmer for 10 minutes, stirring occasionally.
  4. Increase the heat to medium. Add the white wine and lemon juice to the pot and stir. Add the mussels, cover the pot, and cook for 5-7 minutes, shaking the pot occasionally, until the mussels open.
  5. Remove from heat and sprinkle with fresh parsley. Serve the mussels in shallow bowls with plenty of the marinara sauce. Accompany with crusty bread for dipping.
