Ingredients
- 2 pounds fresh mussels, scrubbed and debearded
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 can (28 ounces) crushed tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/4 cup chopped fresh parsley
- 1/2 cup dry white wine
- 1 tablespoon lemon juice
Instructions
- Inspect the mussels and remove any with cracked shells. Rinse under cold water and scrub with a brush. Remove the beards by pulling firmly.
- In a large pot, heat the olive oil over medium heat. Add the onion and saute for about 3-4 minutes until translucent. Add the garlic and red pepper flakes and cook, stirring, for another minute.
- Add the crushed tomatoes, salt, pepper, and oregano to the pot. Stir to combine. Reduce the heat to low and let the sauce simmer for 10 minutes, stirring occasionally.
- Increase the heat to medium. Add the white wine and lemon juice to the pot and stir. Add the mussels, cover the pot, and cook for 5-7 minutes, shaking the pot occasionally, until the mussels open.
- Remove from heat and sprinkle with fresh parsley. Serve the mussels in shallow bowls with plenty of the marinara sauce. Accompany with crusty bread for dipping.
