Ingredients
- 2 pounds of boneless chicken thighs or pork shoulder, cut into 2-inch pieces
- 4 guajillo chiles, seeded and deveined
- 2 pasilla chiles, seeded and deveined
- 2 cloves of garlic
- 1/2 cup of white vinegar
- 1/4 cup of orange juice
- 1 tablespoon of ground cumin
- 1 teaspoon of dried oregano
- 1 teaspoon of salt
- 1/2 teaspoon of freshly ground black pepper
- 8 parchment paper squares (about 12×12 inches) or banana leaves
Instructions
- Toast the guajillo and pasilla chiles in a dry skillet over medium heat for about 1-2 minutes on each side until aromatic. Be careful not to burn them, as this can make the sauce bitter.
- Place the toasted chiles in a bowl and cover them with boiling water. Let them soak for about 15 minutes until they are soft.
- Drain the chiles and place them in a blender along with garlic, vinegar, orange juice, cumin, oregano, salt, and black pepper. Blend until you have a smooth paste.
- Place the meat in a large bowl, pour the chile marinade over it, and mix well until the meat is evenly coated. Cover and marinate for at least 1 hour in the refrigerator for best results.
- Preheat your oven to 350°F (175°C).
- Lay out the parchment squares or banana leaves. Divide the marinated meat evenly among the squares, placing it in the center of each.
- Fold the sides of the parchment or banana leaves over the meat to create a neat, sealed package. Secure with kitchen twine if necessary.
- Place the parcels in a baking dish and cover tightly with aluminum foil to prevent steam from escaping.
- Bake the mixiotes in the preheated oven for about 1.5 hours or until the meat is tender and thoroughly cooked.
- Carefully remove the packages from the oven. Serve the mixiotes hot, directly in their opening parcels, with rice or tortillas on the side. Be cautious when opening the parcels, as steam will escape.
