Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Start by patting the chicken breasts dry with a paper towel. Season both sides with salt and pepper.
  2. Place the flour on a plate. Dredge each chicken breast in the flour, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts to the pan.
  4. Cook for 5-7 minutes on each side or until golden brown and cooked through. Make sure the chicken reaches an internal temperature of 165°F (74°C). Remove chicken from the skillet and set aside.
  5. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  6. Pour the chicken broth and lemon juice into the skillet. Bring the mixture to a simmer and cook for about 5 minutes to slightly reduce the sauce.
  7. Turn off the heat and whisk in the butter until melted and the sauce is smooth.
  8. Return the chicken to the skillet, spooning the sauce over the chicken. Garnish with fresh parsley before serving.
