Ingredients
- 1 pound lamb shoulder, trimmed and cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 red onion, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 4 wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 20 minutes to prevent them from burning during grilling.
- In a large bowl, combine olive oil, minced garlic, lemon juice, ground cumin, paprika, salt, and black pepper. Whisk until well mixed.
- Add the lamb cubes to the bowl and toss well until the cubes are coated evenly with the marinade. Let it marinate for at least 20 minutes, but if you have time, marinate for 1 to 2 hours in the refrigerator for even more flavor.
- Preheat your grill to medium-high heat, approximately 400°F (204°C).
- Alternately thread the marinated lamb cubes, red onion pieces, and red bell pepper pieces onto the skewers.
- Place the skewers on the grill and cook for about 12-15 minutes, turning occasionally, until the lamb is browned on all sides and cooked to your desired doneness (145°F for medium-rare).
- Remove the skewers from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, keeping the lamb tender and juicy.
- Serve warm with a side of your choice, such as pita bread, salad, or a yogurt dip.
