Ingredients

  • 8 lamb cutlets
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. In a small bowl, combine the minced garlic, olive oil, rosemary, thyme, salt, and pepper. Mix well to form a marinade.
  2. Place the lamb cutlets in a shallow dish and pour the marinade over them, making sure each cutlet is coated evenly. Let them marinate for at least 15 minutes at room temperature. For deeper flavor, marinate for up to 2 hours in the refrigerator.
  3. Preheat the oven to 400°F (200°C). Meanwhile, heat a large oven-proof skillet over medium-high heat.
  4. Once the skillet is hot, add the lamb cutlets. Sear each side for about 2-3 minutes until they are browned. Be cautious of oil splatter.
  5. Transfer the skillet to the preheated oven and roast the cutlets for 5-10 minutes, depending on your desired doneness. For medium-rare, aim for 6-7 minutes.
  6. Remove the skillet from the oven. Using tongs, transfer the lamb cutlets to a serving plate and let them rest for about 5 minutes. Resting allows the juices to redistribute, keeping the meat tender.
  7. Before serving, drizzle the lamb cutlets with lemon juice for a hint of freshness. Serve them with your choice of side dish, such as roasted vegetables or a fresh salad.
