Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon gochujang (Korean chili paste)
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup kimchi, chopped
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds
  • 1 tablespoon vegetable oil
  • Salt to taste

Instructions

  1. In a medium bowl, whisk together the soy sauce, sesame oil, brown sugar, minced garlic, grated ginger, and gochujang until combined.
  2. Add the sliced beef to the marinade, ensuring each piece is well-coated. Cover the bowl and let the beef marinate for at least 15 minutes. Tip: For more flavor, marinate the beef for up to 2 hours in the refrigerator.
  3. Heat a grill pan or skillet over medium-high heat and add the vegetable oil. Once hot, add the marinated beef in batches, cooking for about 3-5 minutes per side until fully cooked and slightly caramelized. Remove from heat and set aside.
  4. Warm the flour tortillas in a dry skillet over low heat or wrap them in damp paper towels and microwave for about 20-30 seconds. This makes them more pliable for wrapping.
  5. To assemble the burritos, lay a warm tortilla flat. Spread 1/4 cup of the cooked rice onto the center of the tortilla.
  6. Top the rice with 1/4 of the cooked beef, 1/4 cup of chopped kimchi, a handful of shredded carrots, and a few slices of cucumber. Sprinkle with green onions and sesame seeds.
  7. Fold the sides of the tortilla over the filling, then tightly roll the bottom up over the filling and continue rolling to form a burrito. Repeat for the remaining tortillas and ingredients.
  8. For a crispy finish, heat a clean skillet over medium heat. Place each burrito seam-side down on the skillet for about 2-3 minutes on each side until golden and crispy. Serve immediately and enjoy!
