Ingredients
- 4 corn tortillas
- 2 tablespoons vegetable oil
- 1 cup canned black beans, drained and rinsed
- 4 large eggs
- 1 cup tomato salsa
- 1 avocado, sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
- 1 lime, cut into wedges
Instructions
- Preheat your oven to 200°F to keep prepared tortillas warm.
- Heat 1 tablespoon of vegetable oil in a nonstick skillet over medium-high heat.
- Once hot, lightly fry each tortilla until golden and somewhat crispy, about 1 minute per side.
- Transfer the fried tortillas to a baking sheet and place them in the oven to keep warm.
- In the same skillet, add the remaining oil. Reduce the heat to medium and add the black beans.
- Cook the beans until heated through, then season with salt and pepper. Keep them warm over low heat.
- In a separate nonstick skillet, cook the eggs sunny-side up to your desired doneness. A runny yolk is traditional for Huevos Rancheros.
- To assemble, place two warm tortillas on each plate.
- Layer the tortillas with black beans, one cooked egg per tortilla, and spoon tomato salsa over the top.
- Top with avocado slices, crumbled feta cheese, and a sprinkle of fresh cilantro.
