Ingredients

  • 4 corn tortillas
  • 2 tablespoons vegetable oil
  • 1 cup canned black beans, drained and rinsed
  • 4 large eggs
  • 1 cup tomato salsa
  • 1 avocado, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste
  • 1 lime, cut into wedges

Instructions

  1. Preheat your oven to 200°F to keep prepared tortillas warm.
  2. Heat 1 tablespoon of vegetable oil in a nonstick skillet over medium-high heat.
  3. Once hot, lightly fry each tortilla until golden and somewhat crispy, about 1 minute per side.
  4. Transfer the fried tortillas to a baking sheet and place them in the oven to keep warm.
  5. In the same skillet, add the remaining oil. Reduce the heat to medium and add the black beans.
  6. Cook the beans until heated through, then season with salt and pepper. Keep them warm over low heat.
  7. In a separate nonstick skillet, cook the eggs sunny-side up to your desired doneness. A runny yolk is traditional for Huevos Rancheros.
  8. To assemble, place two warm tortillas on each plate.
  9. Layer the tortillas with black beans, one cooked egg per tortilla, and spoon tomato salsa over the top.
  10. Top with avocado slices, crumbled feta cheese, and a sprinkle of fresh cilantro.
  11. Serve with lime wedges for added zest and enjoy your delicious Huevos Rancheros!
