Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup walnuts
  • 1/2 cup white sugar
  • 1 cup water
  • 4 tablespoons honey
  • 1 tablespoon mayonnaise
  • 1 tablespoon sweetened condensed milk
  • 2 egg whites
  • 1/2 cup cornstarch
  • 1/2 cup vegetable oil
  • Salt, to taste
  • Green onions, chopped, for garnish (optional)

Instructions

  1. Prepare the Candied Walnuts: In a small saucepan, combine 1/2 cup sugar and 1 cup water. Bring to a boil over medium heat. Stir occasionally until the sugar dissolves, and let it simmer for 5 minutes.
  2. Add the walnuts to the saucepan, and cook for another 2-3 minutes until they are golden and glossy. Remove the walnuts using a slotted spoon and place them on a baking sheet lined with parchment paper. Let them cool completely.
  3. Mix the Sauce: In a small bowl, whisk together 4 tablespoons honey, 1 tablespoon mayonnaise, and 1 tablespoon sweetened condensed milk until smooth. Set aside.
  4. Prepare the Shrimp: Pat the shrimp dry with paper towels. In a medium bowl, beat 2 egg whites until foamy.
  5. Add the shrimp to the egg whites and gently toss to coat. Place 1/2 cup cornstarch in a shallow dish. Dredge the shrimp in cornstarch, ensuring they are evenly coated. Shake off any excess cornstarch.
  6. Fry the Shrimp: Heat 1/2 cup vegetable oil in a large skillet over medium-high heat until hot (about 350°F). Carefully add the shrimp in batches and fry for about 2-3 minutes per side, or until golden brown and cooked through.
  7. Transfer cooked shrimp to a paper towel-lined plate to drain excess oil. Repeat with remaining shrimp.
  8. Toss Shrimp with Sauce: In a large bowl, combine the cooked shrimp and the prepared sauce. Gently toss the shrimp to coat them evenly.
  9. Assemble the Dish: Transfer the shrimp to a serving platter. Top with candied walnuts and garnish with chopped green onions if desired. Serve immediately while still crispy.
  10. Helpful Tip: For maximum crispiness, serve the shrimp immediately after coating it in the sauce. To save time, you can prepare the candied walnuts in advance.
