Ingredients
- 1 lb ground lamb or beef (or a mix)
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 4 medium pita breads
- 1 cup diced tomatoes
- 1/2 cup thinly sliced red onion
- For Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cup grated cucumber (squeezed dry)
- 1 clove garlic (minced)
- 1 tbsp lemon juice
- 1 tsp olive oil
- 1/2 tsp dried dill
- 1/4 tsp salt
Instructions
- Grate cucumber and squeeze out excess moisture using paper towels. In a bowl, combine yogurt, cucumber, garlic, lemon juice, olive oil, dill, and salt. Refrigerate until ready to use.
- In a bowl, mix ground meat with garlic powder, oregano, cumin, paprika, salt, and pepper. Shape into 4 oval-shaped patties (like small meatloaves) for even cooking.
- Heat olive oil in a skillet over medium-high heat. Cook patties for 4-5 minutes per side or until internal temperature reaches 160°F. Let rest 3 minutes, then slice thinly. Tip: Avoid overcrowding the pan to ensure a good sear.
- Wrap pitas in aluminum foil and warm in a 300°F oven for 5 minutes, or heat in a dry skillet for 30 seconds per side. Tip: Slightly toasting prevents tearing.
- Spread tzatziki on each pita. Add sliced meat, tomatoes, and onions. Fold and wrap the bottom in parchment paper for easy handling.
