Ingredients
- 1 whole turbot fish, about 1.5 lbs, cleaned and gutted
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 lemon, sliced
- 2 sprigs fresh rosemary
- 1 tablespoon butter, melted
Instructions
- Preheat your grill to medium-high heat, around 375-400°F. If you’re using a grill pan, place it over the burner and allow it to heat up thoroughly.
- Pat the turbot fish dry with paper towels to remove any excess moisture. This helps achieve a nice, crispy finish.
- Brush the skin and cavity of the fish with olive oil, using the basting brush. Season both sides generously with sea salt and freshly ground black pepper.
- Place the fresh rosemary and a couple of lemon slices inside the cavity of the fish. This will infuse the turbot with wonderful flavors as it cooks.
- Carefully place the fish onto the hot grill, skin side down. Use a spatula to help make this easier. Let it grill for about 5-7 minutes on the first side.
- Gently flip the fish using a spatula and grill for another 5-7 minutes on the other side. The fish should be opaque and flake easily with a fork.
- Remove the fish from the grill and drizzle with melted butter. This will add richness and a touch of indulgence to the dish.
