Ingredients

  • 1 whole turbot fish, about 1.5 lbs, cleaned and gutted
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 lemon, sliced
  • 2 sprigs fresh rosemary
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your grill to medium-high heat, around 375-400°F. If you’re using a grill pan, place it over the burner and allow it to heat up thoroughly.
  2. Pat the turbot fish dry with paper towels to remove any excess moisture. This helps achieve a nice, crispy finish.
  3. Brush the skin and cavity of the fish with olive oil, using the basting brush. Season both sides generously with sea salt and freshly ground black pepper.
  4. Place the fresh rosemary and a couple of lemon slices inside the cavity of the fish. This will infuse the turbot with wonderful flavors as it cooks.
  5. Carefully place the fish onto the hot grill, skin side down. Use a spatula to help make this easier. Let it grill for about 5-7 minutes on the first side.
  6. Gently flip the fish using a spatula and grill for another 5-7 minutes on the other side. The fish should be opaque and flake easily with a fork.
  7. Remove the fish from the grill and drizzle with melted butter. This will add richness and a touch of indulgence to the dish.
