Ingredients
- 4 sole fillets
- 2 tablespoons olive oil
- 1 lemon, sliced thinly
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to a high setting, around 400°F. This will ensure the fish cooks quickly and evenly.
- Rinse the sole fillets under cold water, then pat them dry with paper towels. This helps remove any excess moisture which will let the fish grill nicely.
- In a small bowl, combine olive oil, lemon juice, minced garlic, thyme, rosemary, salt, and pepper. Mix well to create a marinade.
- Lay the sole fillets in a shallow dish and pour the marinade over them, ensuring each fillet is well-coated. Let them marinate for at least 5 minutes, but not more than 10 to maintain the delicate texture.
- Place thin slices of lemon on top of each fillet. This will enhance the flavor as the fish grills.
- Lightly oil the grill grate to prevent sticking. Use a folded piece of paper towel dipped in oil and a pair of tongs to do this safely.
- Carefully place the fillets on the grill. Close the grill lid and cook for about 6-7 minutes on each side. The fish should be opaque and flake easily with a fork when done.
- Once cooked, remove the fillets from the grill and let them rest for a couple of minutes. Resting helps redistribute the juices throughout the fish.
