Ingredients

  • 4 sole fillets
  • 2 tablespoons olive oil
  • 1 lemon, sliced thinly
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to a high setting, around 400°F. This will ensure the fish cooks quickly and evenly.
  2. Rinse the sole fillets under cold water, then pat them dry with paper towels. This helps remove any excess moisture which will let the fish grill nicely.
  3. In a small bowl, combine olive oil, lemon juice, minced garlic, thyme, rosemary, salt, and pepper. Mix well to create a marinade.
  4. Lay the sole fillets in a shallow dish and pour the marinade over them, ensuring each fillet is well-coated. Let them marinate for at least 5 minutes, but not more than 10 to maintain the delicate texture.
  5. Place thin slices of lemon on top of each fillet. This will enhance the flavor as the fish grills.
  6. Lightly oil the grill grate to prevent sticking. Use a folded piece of paper towel dipped in oil and a pair of tongs to do this safely.
  7. Carefully place the fillets on the grill. Close the grill lid and cook for about 6-7 minutes on each side. The fish should be opaque and flake easily with a fork when done.
  8. Once cooked, remove the fillets from the grill and let them rest for a couple of minutes. Resting helps redistribute the juices throughout the fish.
  9. Garnish with fresh parsley before serving. Serve immediately with additional lemon wedges on the side if desired.
