Ingredients
- 1.5 lbs large shrimp (peeled and deveined, tails on)
- 3 tbsp olive oil
- 3 garlic cloves (minced)
- 1 lemon (zested and juiced)
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley (chopped, for garnish)
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, garlic powder, cayenne (if using), salt, and pepper. Mix well.
- Add shrimp to the marinade and toss to coat. Let sit for 10 minutes (no longer, as citrus can “cook” the shrimp).
- Preheat grill to medium-high heat (375-400°F).
- Thread shrimp onto skewers (4-5 per skewer). Tip: Leave a small space between shrimp for even cooking.
