Ingredients

  • 1.5 lbs large shrimp (peeled and deveined, tails on)
  • 3 tbsp olive oil
  • 3 garlic cloves (minced)
  • 1 lemon (zested and juiced)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley (chopped, for garnish)
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, garlic powder, cayenne (if using), salt, and pepper. Mix well.
  3. Add shrimp to the marinade and toss to coat. Let sit for 10 minutes (no longer, as citrus can “cook” the shrimp).
  4. Preheat grill to medium-high heat (375-400°F).
  5. Thread shrimp onto skewers (4-5 per skewer). Tip: Leave a small space between shrimp for even cooking.
  6. Grill skewers for 2-3 minutes per side, until shrimp turn pink and opaque. Avoid overcooking.
