- Preheat your grill to medium-high heat, approximately 400°F. If using a charcoal grill, allow the coals to turn grey before cooking.
- In a large mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, salt, black pepper, and red pepper flakes.
- Add the scampi to the bowl and gently toss to coat with the marinade. Allow it to rest for at least 10 minutes to absorb the flavors.
- If you do not have a grill pan, create a makeshift one using foil by folding it to create sturdy edges that trap juices.
