Ingredients

  • 1 lb scampi, peeled and deveined
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zest and juice
  • 1 tablespoon finely chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your grill to medium-high heat, approximately 400°F. If using a charcoal grill, allow the coals to turn grey before cooking.
  2. In a large mixing bowl, combine olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, salt, black pepper, and red pepper flakes.
  3. Add the scampi to the bowl and gently toss to coat with the marinade. Allow it to rest for at least 10 minutes to absorb the flavors.
  4. If you do not have a grill pan, create a makeshift one using foil by folding it to create sturdy edges that trap juices.
  5. Helpful Tip: Use a basting brush to evenly distribute the marinade over each piece of scampi if necessary.
  6. Place the scampi on the grill pan or foil, and place it onto the grill.
  7. Grill the scampi for about 3-4 minutes on each side, or until they turn opaque and have grill marks. Use tongs to carefully turn them over.
  8. In a small bowl, melt the butter and use it to baste the scampi once they are nearly cooked through. This will enhance their flavor and keep them juicy.
  9. Helpful Tip: Avoid overcooking the scampi. They should be juicy and tender, not rubbery.
  10. Remove the scampi from the grill and transfer to a serving plate. Garnish with additional fresh parsley if desired.
  11. Serve immediately with lemon wedges on the side for added zest.
