Ingredients
- 1 lb large sea scallops
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 lemon (zest and juice)
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat your grill to high, about 450°F (232°C). A hot grill ensures a nice sear on the scallops.
- Rinse the scallops under cold water and pat them dry with paper towels. Make sure they are completely dry to ensure a good sear.
- In a small bowl, mix the olive oil with minced garlic. Brush the scallops generously with the garlic oil. Season both sides with salt and pepper.
- Place the scallops in a grill basket or thread them onto skewers. Arrange them in a single layer to ensure even cooking.
- Grill the scallops for 2-3 minutes per side, without moving them, until they develop a golden crust and are cooked through. They should be firm to the touch and opaque.
- While the scallops are grilling, melt the butter in a small saucepan over medium heat. Add the lemon juice and zest. Stir well and remove from heat.
- Once the scallops are ready, remove them from the grill and drizzle with the lemon butter. Garnish with chopped parsley before serving.
