Ingredients

  • 1 lb large sea scallops
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 lemon (zest and juice)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your grill to high, about 450°F (232°C). A hot grill ensures a nice sear on the scallops.
  2. Rinse the scallops under cold water and pat them dry with paper towels. Make sure they are completely dry to ensure a good sear.
  3. In a small bowl, mix the olive oil with minced garlic. Brush the scallops generously with the garlic oil. Season both sides with salt and pepper.
  4. Place the scallops in a grill basket or thread them onto skewers. Arrange them in a single layer to ensure even cooking.
  5. Grill the scallops for 2-3 minutes per side, without moving them, until they develop a golden crust and are cooked through. They should be firm to the touch and opaque.
  6. While the scallops are grilling, melt the butter in a small saucepan over medium heat. Add the lemon juice and zest. Stir well and remove from heat.
