Instructions
- Remove the ribeye steaks from the refrigerator and let them come to room temperature, about 30 minutes before grilling. This helps the steaks cook more evenly.
- Preheat your grill to high heat, around 450°F to 500°F. If using a gas grill, turn on all burners. If using charcoal, light the coals and spread them evenly across the grill.
- Pat the steaks dry with paper towels. Drying the steaks helps to create a nice crust when grilling.
- Brush the steaks with olive oil on both sides. Season generously with salt, black pepper, garlic powder, and onion powder.
- Place the steaks on the grill. Cover the grill. Let the steaks sear for 3-4 minutes without moving them. This will help form a delicious crust.
- Flip the steaks using tongs, and let them grill for another 3-5 minutes for medium-rare, or longer depending on your desired doneness. An instant-read thermometer should register 135°F for medium-rare.
- Once cooked to your liking, remove the steaks from the grill and let rest for 5 minutes. This allows the juices to redistribute throughout the steak, resulting in a juicier piece of meat.
- Serve the ribeye steaks hot, sliced against the grain, with your choice of sides.
