Ingredients

  • 1 pound prawns, deveined and cleaned
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a large bowl, combine olive oil, garlic, lemon juice, lemon zest, parsley, salt, pepper, paprika, and red pepper flakes. Mix well.
  2. Add the cleaned prawns to the marinade. Stir well to coat all the prawns evenly. Cover and refrigerate for 15 minutes. Tip: Marinating for too long can overcook the prawns, so stick to 15 minutes.
  3. Preheat the grill to medium-high heat, about 400°F. If using a grill pan, make sure it’s hot before cooking.
  4. Thread prawns onto skewers. Tip: Soak wooden skewers in water for about 10 minutes to prevent burning.
  5. Place skewered prawns on the grill and cook for 3-4 minutes on each side, until prawns turn pink and opaque. Be careful not to overcook to prevent them from becoming tough.
  6. Remove the prawns from the grill and serve hot with your choice of sides, like grilled vegetables or a fresh salad.
