Ingredients

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground ginger
  • 1 tablespoon lemon juice
  • 1 bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • Salt, to taste

Instructions

  1. In a large bowl, combine soy sauce, olive oil, honey, minced garlic, black pepper, ground ginger, and lemon juice. Whisk together to create the marinade.
  2. Add the pork cubes to the marinade, ensuring each piece is coated well. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for deeper flavor.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Preheat your grill to medium-high heat, around 400°F.
  5. Thread the marinated pork cubes, bell pepper pieces, and red onion pieces alternately onto the skewers. Ensure that the ingredients are snug but not too tight to allow even cooking.
  6. Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the pork is cooked through and has a nice char on the edges.
  7. Check the internal temperature of the pork using a meat thermometer. It should read 145°F to ensure the pork is safely cooked.
  8. Remove the skewers from the grill and let them rest for a few minutes. Sprinkle with a pinch of salt before serving.
  9. Tip: For extra flavor, brush the skewers with some reserved marinade during grilling, but make sure to boil it first to ensure it’s safe to consume.
