Ingredients
- 1 pound pork tenderloin, cut into 1-inch cubes
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon ground black pepper
- 1 teaspoon ground ginger
- 1 tablespoon lemon juice
- 1 bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- Salt, to taste
Instructions
- In a large bowl, combine soy sauce, olive oil, honey, minced garlic, black pepper, ground ginger, and lemon juice. Whisk together to create the marinade.
- Add the pork cubes to the marinade, ensuring each piece is coated well. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for deeper flavor.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat your grill to medium-high heat, around 400°F.
- Thread the marinated pork cubes, bell pepper pieces, and red onion pieces alternately onto the skewers. Ensure that the ingredients are snug but not too tight to allow even cooking.
- Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the pork is cooked through and has a nice char on the edges.
- Check the internal temperature of the pork using a meat thermometer. It should read 145°F to ensure the pork is safely cooked.
- Remove the skewers from the grill and let them rest for a few minutes. Sprinkle with a pinch of salt before serving.
- Tip: For extra flavor, brush the skewers with some reserved marinade during grilling, but make sure to boil it first to ensure it’s safe to consume.
