Ingredients
- 2 pounds pork loin
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup apple cider vinegar
Instructions
- In a medium bowl, whisk together olive oil, minced garlic, rosemary, thyme, Dijon mustard, apple cider vinegar, salt, and pepper to make the marinade.
- Place the pork loin in a large resealable plastic bag or shallow dish. Pour the marinade over the pork and ensure it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat, around 375°F (190°C).
- Remove the marinated pork loin from the refrigerator and let it sit at room temperature for about 15 minutes before grilling.
- Place the pork loin on the preheated grill. Cover and grill for about 30-35 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).
- Allow the pork loin to rest for at least 5 minutes before slicing. This helps retain the juices.
- Slice the pork loin into 1/2-inch thick slices and serve warm.
