Ingredients

  • 2 pounds pork loin
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup apple cider vinegar

Instructions

  1. In a medium bowl, whisk together olive oil, minced garlic, rosemary, thyme, Dijon mustard, apple cider vinegar, salt, and pepper to make the marinade.
  2. Place the pork loin in a large resealable plastic bag or shallow dish. Pour the marinade over the pork and ensure it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat, around 375°F (190°C).
  4. Remove the marinated pork loin from the refrigerator and let it sit at room temperature for about 15 minutes before grilling.
  5. Place the pork loin on the preheated grill. Cover and grill for about 30-35 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).
  6. Allow the pork loin to rest for at least 5 minutes before slicing. This helps retain the juices.
  7. Slice the pork loin into 1/2-inch thick slices and serve warm.
