Ingredients
- 2 pounds fresh mussels, cleaned and debearded
- 3 tablespoons olive oil
- 2 cloves garlic, finely chopped
- 1 lemon, juiced
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your grill to medium-high heat, around 375°F.
- Rinse the mussels under cold water, scrubbing to remove any debris. Discard any mussels that do not close when tapped.
- In a large bowl, combine the olive oil, garlic, lemon juice, salt, and pepper. Stir well.
- Add the clean mussels to the bowl and toss to coat them evenly with the marinade. Let sit for 5 minutes to absorb the flavors.
- Place the mussels in a grilling pan or basket to prevent them from slipping through the grates.
- Place the grilling pan on the preheated grill. Cover the grill and cook for 8-10 minutes, or until the mussels open.
- Remove from the grill. Discard any mussels that have not opened.
- Serve the mussels hot, garnished with chopped parsley if desired. Enjoy them plain or with crusty bread to soak up the juices.
- Tip: Be sure to watch the mussels closely on the grill; they cook quickly. Overcooking can make them tough.
- Tip: For extra flavor, add a pinch of red pepper flakes to the marinade.
