Ingredients
- 2 lbs monkfish fillets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- Salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your grill or grill pan to medium-high heat, approximately 400°F to 450°F.
- In a small bowl, combine the olive oil, minced garlic, lemon zest, and lemon juice. Stir well to create a marinade.
- Pat the monkfish fillets dry with paper towels to ensure good sear when grilling. Season both sides of the fillets with salt and pepper.
- Brush the marinade evenly over both sides of the monkfish fillets using a basting brush. Let the fillets sit and marinate for about 5 minutes while the grill continues to heat.
