Ingredients

  • 2 lbs monkfish fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your grill or grill pan to medium-high heat, approximately 400°F to 450°F.
  2. In a small bowl, combine the olive oil, minced garlic, lemon zest, and lemon juice. Stir well to create a marinade.
  3. Pat the monkfish fillets dry with paper towels to ensure good sear when grilling. Season both sides of the fillets with salt and pepper.
  4. Brush the marinade evenly over both sides of the monkfish fillets using a basting brush. Let the fillets sit and marinate for about 5 minutes while the grill continues to heat.
