Ingredients

  • 2 whole lobsters (1.5 to 2 pounds each)
  • 1/4 cup melted butter
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Begin by preparing your grill. Light a charcoal or gas grill to medium-high heat, roughly 450°F. If using charcoal, make sure the coals are well ashed over before cooking.
  2. To prepare the lobsters, place each lobster on a cutting board. Use a sharp knife to cut down the center of each lobster, starting from the head and working towards the tail. Be careful and work slowly to ensure a clean cut.
  3. Mix the melted butter, minced garlic, lemon juice, and parsley in a small bowl. Stir until well combined. This will be your basting sauce.
  4. Gently spread open the lobster halves. Remove any yellow tomalley (the liver) if preferred, or leave it for added flavor.
  5. Brush the meat generously with the prepared butter and garlic mixture. Sprinkle each lobster with a pinch of salt and freshly ground black pepper for added flavor.
  6. Place the lobsters cut side down on the grill. Grill for about 5-7 minutes. Use tongs to carefully flip them over.
  7. Brush the lobster again with your butter mixture. Grill for an additional 5-7 minutes, until the meat is firm and opaque. Be cautious not to overcook, as lobster can become tough.
  8. If the seasoning drips, use aluminum foil beneath the lobsters to prevent burning. This also makes cleanup easier.
  9. Once cooked, remove the lobsters from the grill using tongs and let them rest for a couple of minutes. Serve with a wedge of lemon and sprinkle parsley for garnish. Enjoy hot.
