Ingredients
- 2 whole lobsters (1.5 to 2 pounds each)
- 1/4 cup melted butter
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- Salt to taste
- Black pepper to taste
Instructions
- Begin by preparing your grill. Light a charcoal or gas grill to medium-high heat, roughly 450°F. If using charcoal, make sure the coals are well ashed over before cooking.
- To prepare the lobsters, place each lobster on a cutting board. Use a sharp knife to cut down the center of each lobster, starting from the head and working towards the tail. Be careful and work slowly to ensure a clean cut.
- Mix the melted butter, minced garlic, lemon juice, and parsley in a small bowl. Stir until well combined. This will be your basting sauce.
- Gently spread open the lobster halves. Remove any yellow tomalley (the liver) if preferred, or leave it for added flavor.
- Brush the meat generously with the prepared butter and garlic mixture. Sprinkle each lobster with a pinch of salt and freshly ground black pepper for added flavor.
- Place the lobsters cut side down on the grill. Grill for about 5-7 minutes. Use tongs to carefully flip them over.
- Brush the lobster again with your butter mixture. Grill for an additional 5-7 minutes, until the meat is firm and opaque. Be cautious not to overcook, as lobster can become tough.
- If the seasoning drips, use aluminum foil beneath the lobsters to prevent burning. This also makes cleanup easier.
- Once cooked, remove the lobsters from the grill using tongs and let them rest for a couple of minutes. Serve with a wedge of lemon and sprinkle parsley for garnish. Enjoy hot.
