Ingredients
- 8 lamb chops, about 1 inch thick
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Lemon wedges for serving (optional)
Instructions
- In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Stir well to create a marinade.
- Place the lamb chops in the bowl, and use your hands to rub the marinade all over the chops. Ensure they are well coated. Let them marinate at room temperature for 10 minutes. Tip: For more flavor, you can marinate them in the fridge for up to 2 hours.
- Preheat your grill pan or outdoor grill to medium-high heat (about 400 degrees Fahrenheit) about 5 minutes before you’re ready to cook.
- Place the lamb chops on the grill, and cook for about 4-5 minutes on each side, which should yield medium-rare doneness. Tip: Use a meat thermometer inserted into the thickest part to check for a temperature of 135 degrees Fahrenheit for medium-rare.
- Once cooked to your liking, remove the lamb chops from the grill. Let them rest on a plate for 5 minutes before serving. This allows the juices to redistribute, resulting in moister chops.
- Serve the grilled lamb chops hot, with lemon wedges on the side if desired, for an added zing of flavor.
