Ingredients

  • 4 amberjack fillets (approximately 6 ounces each)
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 2 teaspoons lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat your grill to medium-high heat, about 400°F.
  2. While the grill preheats, prepare the marinade. In a small bowl, combine olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper. Mix well.
  3. Place the amberjack fillets in a shallow dish. Pour the marinade over them, ensuring each piece is coated. Let them sit for about 10 minutes to absorb the flavors.
  4. Once marinated, remove the fillets from the dish and place them on the hot grill. If possible, use a fish grill basket to make handling easier.
  5. Grill each side of the fillets for about 4-5 minutes, or until the fish is opaque and flakes easily with a fork. Keep the grill lid closed while cooking to retain heat and moisture.
  6. After grilling, carefully remove the fillets from the grill using a spatula. Transfer to a serving plate.
  7. Garnish each fillet with freshly chopped parsley and rosemary before serving.
  8. Serve immediately with lemon wedges on the side for an extra burst of citrus flavor.
