Ingredients
- 4 amberjack fillets (approximately 6 ounces each)
- 2 tablespoons olive oil
- 1 lemon, juiced
- 2 teaspoons lemon zest
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat your grill to medium-high heat, about 400°F.
- While the grill preheats, prepare the marinade. In a small bowl, combine olive oil, lemon juice, lemon zest, minced garlic, salt, and black pepper. Mix well.
- Place the amberjack fillets in a shallow dish. Pour the marinade over them, ensuring each piece is coated. Let them sit for about 10 minutes to absorb the flavors.
- Once marinated, remove the fillets from the dish and place them on the hot grill. If possible, use a fish grill basket to make handling easier.
- Grill each side of the fillets for about 4-5 minutes, or until the fish is opaque and flakes easily with a fork. Keep the grill lid closed while cooking to retain heat and moisture.
- After grilling, carefully remove the fillets from the grill using a spatula. Transfer to a serving plate.
- Garnish each fillet with freshly chopped parsley and rosemary before serving.
- Serve immediately with lemon wedges on the side for an extra burst of citrus flavor.
