Ingredients
- 1 lb ground beef
- 1 tsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cans (4 oz each) diced green chilies
- 1 cup beef broth
- 8 flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup chopped fresh cilantro
- Optional: sour cream and salsa for serving
Instructions
- Gather all ingredients and read the recipe thoroughly. Having everything ready will make cooking much smoother.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic and sauté for about 2-3 minutes until they become translucent. Stir frequently to avoid burning.
- Add the ground beef to the skillet and cook, breaking it up with a spatula, until it’s browned and no longer pink. This should take about 7-10 minutes.
- Drain any excess fat from the skillet carefully. Return the skillet to the heat and add cumin, paprika, salt, and pepper. Stir well to coat the beef with the spices.
- Stir in the diced green chilies and beef broth. Bring the mixture to a simmer, then reduce the heat to low and let it cook for about 10 minutes. This will help meld the flavors together.
- While the beef is simmering, warm the flour tortillas in the microwave or on a skillet for a few seconds until soft. This makes them easier to fold.
- Fill each tortilla with about 1/2 cup of the beef mixture and sprinkle cheese on top. Fold the sides over and roll up to form a burrito. Be careful not to overfill.
- Place burritos seam side down in an oven-safe dish. Preheat your oven to 350°F (175°C) and bake the burritos for about 10 minutes to melt the cheese and warm through.
- Remove from oven and sprinkle chopped cilantro over the top. Feel free to add sour cream and salsa for extra flavor.
