Ingredients

  • 1 lb ground beef
  • 1 tsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cans (4 oz each) diced green chilies
  • 1 cup beef broth
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup chopped fresh cilantro
  • Optional: sour cream and salsa for serving

Instructions

  1. Gather all ingredients and read the recipe thoroughly. Having everything ready will make cooking much smoother.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic and sauté for about 2-3 minutes until they become translucent. Stir frequently to avoid burning.
  3. Add the ground beef to the skillet and cook, breaking it up with a spatula, until it’s browned and no longer pink. This should take about 7-10 minutes.
  4. Drain any excess fat from the skillet carefully. Return the skillet to the heat and add cumin, paprika, salt, and pepper. Stir well to coat the beef with the spices.
  5. Stir in the diced green chilies and beef broth. Bring the mixture to a simmer, then reduce the heat to low and let it cook for about 10 minutes. This will help meld the flavors together.
  6. While the beef is simmering, warm the flour tortillas in the microwave or on a skillet for a few seconds until soft. This makes them easier to fold.
  7. Fill each tortilla with about 1/2 cup of the beef mixture and sprinkle cheese on top. Fold the sides over and roll up to form a burrito. Be careful not to overfill.
  8. Place burritos seam side down in an oven-safe dish. Preheat your oven to 350°F (175°C) and bake the burritos for about 10 minutes to melt the cheese and warm through.
  9. Remove from oven and sprinkle chopped cilantro over the top. Feel free to add sour cream and salsa for extra flavor.
