Ingredients

  • 2 cups masa harina
  • 1/2 teaspoon salt
  • 1 1/4 cups warm water
  • 2 tablespoons vegetable oil
  • 1 cup refried beans
  • 1 cup shredded lettuce
  • 1/2 cup salsa
  • 1/4 cup crumbled cotija cheese

Instructions

  1. In a large bowl, combine masa harina and salt. Slowly add the warm water, mixing with your hands until a dough forms. The dough should be smooth but not sticky. If it’s too dry, add a tablespoon of water at a time. If too sticky, add a bit more masa harina.
  2. Divide the dough into 6 equal portions and roll each portion into a ball. Use your palms to flatten each ball into a patty about 1/4 inch thick.
  3. Heat a large skillet or griddle over medium-high heat. Lightly grease the surface with vegetable oil using a paper towel.
  4. Place the gorditas on the skillet, cooking for 2-3 minutes on each side, until there are brown spots and they are puffed and cooked through. Carefully monitor the heat to avoid burning.
  5. Remove the gorditas from the skillet and let them cool slightly. Using a small, sharp knife, make a slit on one edge of each gordita, creating a pocket.
  6. Fill each gordita with about 2 tablespoons of refried beans, followed by lettuce and a spoonful of salsa. Top with crumbled cotija cheese.
  7. Serve immediately. Enjoy your homemade gorditas with a side of rice or a cold beverage.
