Ingredients
- 2 cups masa harina
- 1/2 teaspoon salt
- 1 1/4 cups warm water
- 2 tablespoons vegetable oil
- 1 cup refried beans
- 1 cup shredded lettuce
- 1/2 cup salsa
- 1/4 cup crumbled cotija cheese
Instructions
- In a large bowl, combine masa harina and salt. Slowly add the warm water, mixing with your hands until a dough forms. The dough should be smooth but not sticky. If it’s too dry, add a tablespoon of water at a time. If too sticky, add a bit more masa harina.
- Divide the dough into 6 equal portions and roll each portion into a ball. Use your palms to flatten each ball into a patty about 1/4 inch thick.
- Heat a large skillet or griddle over medium-high heat. Lightly grease the surface with vegetable oil using a paper towel.
- Place the gorditas on the skillet, cooking for 2-3 minutes on each side, until there are brown spots and they are puffed and cooked through. Carefully monitor the heat to avoid burning.
- Remove the gorditas from the skillet and let them cool slightly. Using a small, sharp knife, make a slit on one edge of each gordita, creating a pocket.
- Fill each gordita with about 2 tablespoons of refried beans, followed by lettuce and a spoonful of salsa. Top with crumbled cotija cheese.
- Serve immediately. Enjoy your homemade gorditas with a side of rice or a cold beverage.
