Ingredients
- 1 pound potato gnocchi
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Fill a large pot with water, add a pinch of salt, and bring it to a boil. This will be for cooking the gnocchi later on.
- In a separate medium-sized saucepan, heat the olive oil over medium heat.
- Add the chopped onion to the saucepan and sauté for about 5 minutes until it becomes soft and translucent.
- Add the minced garlic to the onion and continue to sauté for another minute, until the garlic is fragrant.
- Stir in the crushed tomatoes and tomato paste. Mix well to combine.
- Add the oregano, basil, salt, and pepper to the sauce. Stir thoroughly and bring the sauce to a gentle simmer.
- Reduce the heat to low. Cover the saucepan and let the sauce simmer gently for about 15-20 minutes, stirring occasionally.
- While the sauce is simmering, cook the gnocchi in the boiling water according to the package instructions. They are ready when they float to the surface, usually taking about 2-3 minutes.
- Using a slotted spoon, remove the gnocchi from the pot and add them directly to the simmering tomato sauce. Stir to coat the gnocchi in the sauce.
- Taste the sauce and adjust the salt and pepper if needed.
- Serve the gnocchi hot, topped with grated Parmesan cheese and fresh basil leaves for garnish. Enjoy immediately.
