Ingredients

  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Fill a large pot with water, add a pinch of salt, and bring it to a boil. This will be for cooking the gnocchi later on.
  2. In a separate medium-sized saucepan, heat the olive oil over medium heat.
  3. Add the chopped onion to the saucepan and sauté for about 5 minutes until it becomes soft and translucent.
  4. Add the minced garlic to the onion and continue to sauté for another minute, until the garlic is fragrant.
  5. Stir in the crushed tomatoes and tomato paste. Mix well to combine.
  6. Add the oregano, basil, salt, and pepper to the sauce. Stir thoroughly and bring the sauce to a gentle simmer.
  7. Reduce the heat to low. Cover the saucepan and let the sauce simmer gently for about 15-20 minutes, stirring occasionally.
  8. While the sauce is simmering, cook the gnocchi in the boiling water according to the package instructions. They are ready when they float to the surface, usually taking about 2-3 minutes.
  9. Using a slotted spoon, remove the gnocchi from the pot and add them directly to the simmering tomato sauce. Stir to coat the gnocchi in the sauce.
  10. Taste the sauce and adjust the salt and pepper if needed.
  11. Serve the gnocchi hot, topped with grated Parmesan cheese and fresh basil leaves for garnish. Enjoy immediately.
