Ingredients

  • 4 red mullets, cleaned and scaled
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Vegetable oil for frying
  • 1 lemon, cut into wedges
  • Fresh parsley, chopped (optional)

Instructions

  1. Pat the red mullets dry with paper towels. Drying the fish well will ensure a crispy exterior.
  2. In a shallow dish, combine the flour, salt, black pepper, and paprika.
  3. Dredge each mullet in the flour mixture, ensuring it is evenly coated. Shake off any excess flour.
  4. Pour vegetable oil into a large frying pan to a depth of about 1/4 inch. Heat the oil over medium-high heat to 350°F. You can test the oil by dropping a little flour in – it should sizzle immediately.
  5. Carefully place the mullets in the hot oil, skin side down. Cook for 3-4 minutes or until the skin is crispy and golden brown.
  6. Gently flip the mullets and cook for another 2-3 minutes, until the flesh is opaque and flaky. Use a fish spatula to avoid breaking the fish.
  7. Remove the mullets from the pan and drain on paper towels to remove excess oil.
  8. Serve the fried red mullets with lemon wedges and sprinkle with fresh parsley, if using. Squeeze lemon juice over the top for extra flavor.
