Ingredients
- 4 red mullets, cleaned and scaled
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Vegetable oil for frying
- 1 lemon, cut into wedges
- Fresh parsley, chopped (optional)
Instructions
- Pat the red mullets dry with paper towels. Drying the fish well will ensure a crispy exterior.
- In a shallow dish, combine the flour, salt, black pepper, and paprika.
- Dredge each mullet in the flour mixture, ensuring it is evenly coated. Shake off any excess flour.
- Pour vegetable oil into a large frying pan to a depth of about 1/4 inch. Heat the oil over medium-high heat to 350°F. You can test the oil by dropping a little flour in – it should sizzle immediately.
- Carefully place the mullets in the hot oil, skin side down. Cook for 3-4 minutes or until the skin is crispy and golden brown.
- Gently flip the mullets and cook for another 2-3 minutes, until the flesh is opaque and flaky. Use a fish spatula to avoid breaking the fish.
- Remove the mullets from the pan and drain on paper towels to remove excess oil.
- Serve the fried red mullets with lemon wedges and sprinkle with fresh parsley, if using. Squeeze lemon juice over the top for extra flavor.
