Ingredients

  • 4 fish fillets (such as cod, tilapia, or sole), about 6 ounces each
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 8 fresh sage leaves
  • 1/4 cup (1/2 stick) unsalted butter
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 lemon, cut into wedges

Instructions

  1. Start by patting the fish fillets dry with paper towels. Season both sides of the fillets with salt and freshly ground black pepper.
  2. Gather the kitchen equipment: a large nonstick skillet, measuring spoons, a spatula, and paper towels.
  3. In the large nonstick skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add half of the sage leaves. This will release their aroma and infuse the oil.
  4. Add the fish fillets to the skillet, presentation side down. Cook for about 3-4 minutes on this side without moving them. A tip here is to let the fish develop a nice golden-brown crust before attempting to flip it.
  5. Gently flip the fillets using a spatula and add the butter, garlic, and remaining sage leaves to the skillet. Lower the heat to medium and continue cooking for another 3-4 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Baste the fillets with the melted butter and garlic mixture by using a spoon to pour it over the top of each fillet. This will enhance the flavor and keep the fish moist.
  7. Once the fish is cooked through, remove the fillets from the skillet carefully, using the spatula, and place them on a plate lined with paper towels to absorb any excess butter.
