Ingredients
- 4 fish fillets (such as cod, tilapia, or sole), about 6 ounces each
- Salt, to taste
- Freshly ground black pepper, to taste
- 8 fresh sage leaves
- 1/4 cup (1/2 stick) unsalted butter
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 lemon, cut into wedges
Instructions
- Start by patting the fish fillets dry with paper towels. Season both sides of the fillets with salt and freshly ground black pepper.
- Gather the kitchen equipment: a large nonstick skillet, measuring spoons, a spatula, and paper towels.
- In the large nonstick skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, add half of the sage leaves. This will release their aroma and infuse the oil.
- Add the fish fillets to the skillet, presentation side down. Cook for about 3-4 minutes on this side without moving them. A tip here is to let the fish develop a nice golden-brown crust before attempting to flip it.
- Gently flip the fillets using a spatula and add the butter, garlic, and remaining sage leaves to the skillet. Lower the heat to medium and continue cooking for another 3-4 minutes, or until the fish is opaque and flakes easily with a fork.
- Baste the fillets with the melted butter and garlic mixture by using a spoon to pour it over the top of each fillet. This will enhance the flavor and keep the fish moist.
- Once the fish is cooked through, remove the fillets from the skillet carefully, using the spatula, and place them on a plate lined with paper towels to absorb any excess butter.
- Arrange the fish fillets on serving plates and garnish with a squeeze of fresh lemon juice. Serve immediately with lemon wedges on the side.
