  • 1 tablespoon cornstarch

  • 1 red bell pepper, thinly sliced

  • 3 tablespoons fermented black beans, rinsed and mashed
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 cup (120ml) chicken stock or water
  • 2 scallions, chopped

  1. Start by preparing the fish fillets. Pat them dry with a paper towel, then cut into medium-sized pieces (about 2-3 inches in length).
  2. In a small bowl, mix the cornstarch, salt, and white pepper. Coat each fish fillet piece evenly with this mixture. This helps seal in the moisture and gives the fish a slight crisp.
  3. Heat 2 tablespoons of the vegetable oil in a large non-stick pan over medium heat. Tip: Use a pan big enough to hold all the fish in a single layer without overlapping.
