- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 cup (120ml) chicken stock or water
- 2 scallions, chopped

- Start by preparing the fish fillets. Pat them dry with a paper towel, then cut into medium-sized pieces (about 2-3 inches in length).
- In a small bowl, mix the cornstarch, salt, and white pepper. Coat each fish fillet piece evenly with this mixture. This helps seal in the moisture and gives the fish a slight crisp.
- Heat 2 tablespoons of the vegetable oil in a large non-stick pan over medium heat. Tip: Use a pan big enough to hold all the fish in a single layer without overlapping.
- Once the oil is hot, gently place the fish fillets into the pan. Cook for 2-3 minutes on each side, or until they are just cooked through and golden. Remove from the pan and set aside on a plate.
