Ingredients

  • 1 lb white fish fillets (like cod or tilapia)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 lime, juiced
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup pico de gallo
  • 1 avocado, sliced
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 375°F (190°C). Arrange your baking sheet with a piece of parchment paper or lightly grease it to prevent sticking.
  2. Rinse the fish fillets under cold water and pat them dry with paper towels. This helps the seasoning stick better.
  3. In a small bowl, mix together olive oil, chili powder, garlic powder, cumin, salt, and pepper. Rub the spice mixture generously over both sides of the fish fillets.
  4. Place the seasoned fish on the baking sheet. Squeeze half of the lime over the fillets for extra flavor before baking.
  5. Bake the fish in the preheated oven for about 12-15 minutes until it flakes easily with a fork. This ensures the fish is cooked perfectly but not dry. Keep an eye on it in the last few minutes.
  6. While the fish is cooking, prepare the other burrito ingredients. Warm the flour tortillas in a dry pan over medium heat or microwave them for about 10 seconds each. This makes them more pliable when you wrap them.
  7. Once the fish is done, let it rest for a couple of minutes. Then use a fork to gently break it into bite-sized pieces.
  8. Assemble the burritos by laying a tortilla flat. Layer the lettuce, a few spoonfuls of seasoned fish, pico de gallo, and avocado slices. Drizzle with remaining lime juice and add a dollop of sour cream.
  9. Fold in the sides of the tortilla, then roll it into a burrito shape. Ensure all ingredients are snug inside, providing a neat wrap.
  10. Repeat for the remaining tortillas and serve immediately. Enjoy your freshly made fish burritos, and feel free to add extra toppings like hot sauce for additional flavor.
