Ingredients
- 7 oz (200g) fideo pasta (or vermicelli noodles)
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken or vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 avocado, sliced (for serving)
- 1/4 cup crumbled queso fresco (or feta, for serving)
- 1/4 cup Mexican crema or sour cream (for serving)
- Fresh cilantro leaves (for garnish)
Instructions
- Heat a large skillet over medium heat and add the vegetable oil.
- Add the fideo pasta to the skillet and toast the noodles, stirring constantly, for about 3-4 minutes or until they turn golden brown. Be patient and keep an eye on the noodles to avoid burning.
- Remove the toasted noodles from the skillet and set them aside.
- In the same skillet, add the chopped onion and cook for about 3 minutes until it becomes translucent.
- Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently.
- Add the diced tomatoes and their juices to the skillet and cook for 5 minutes, allowing the flavors to meld. Tip: For a smoother sauce, blend the tomatoes in a blender before adding them to the skillet.
- Return the toasted noodles to the skillet and pour in the chicken or vegetable broth. Stir well to combine all ingredients.
- Season the mixture with salt and black pepper. Stir once more and cover the skillet with a lid.
- Reduce the heat to low and cook for about 12-15 minutes, or until the noodles are fully cooked and have absorbed most of the liquid. Tip: Avoid stirring too often to keep the noodles from breaking apart.
- Taste and adjust seasoning if necessary. If you prefer a slightly wetter fideo, add a little more broth.
- Serve the Fideo Seco hot, topped with slices of avocado, crumbled queso fresco, and a drizzle of Mexican crema or sour cream. Garnish with fresh cilantro leaves for extra flavor.
