Ingredients

  • 7 oz (200g) fideo pasta (or vermicelli noodles)
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 avocado, sliced (for serving)
  • 1/4 cup crumbled queso fresco (or feta, for serving)
  • 1/4 cup Mexican crema or sour cream (for serving)
  • Fresh cilantro leaves (for garnish)

Instructions

  1. Heat a large skillet over medium heat and add the vegetable oil.
  2. Add the fideo pasta to the skillet and toast the noodles, stirring constantly, for about 3-4 minutes or until they turn golden brown. Be patient and keep an eye on the noodles to avoid burning.
  3. Remove the toasted noodles from the skillet and set them aside.
  4. In the same skillet, add the chopped onion and cook for about 3 minutes until it becomes translucent.
  5. Add the minced garlic to the skillet and cook for an additional 1 minute, stirring frequently.
  6. Add the diced tomatoes and their juices to the skillet and cook for 5 minutes, allowing the flavors to meld. Tip: For a smoother sauce, blend the tomatoes in a blender before adding them to the skillet.
  7. Return the toasted noodles to the skillet and pour in the chicken or vegetable broth. Stir well to combine all ingredients.
  8. Season the mixture with salt and black pepper. Stir once more and cover the skillet with a lid.
  9. Reduce the heat to low and cook for about 12-15 minutes, or until the noodles are fully cooked and have absorbed most of the liquid. Tip: Avoid stirring too often to keep the noodles from breaking apart.
  10. Taste and adjust seasoning if necessary. If you prefer a slightly wetter fideo, add a little more broth.
  11. Serve the Fideo Seco hot, topped with slices of avocado, crumbled queso fresco, and a drizzle of Mexican crema or sour cream. Garnish with fresh cilantro leaves for extra flavor.
